Thought I would give carb-free Cauli Rice a try... it was actually really tasty and the consistency was perfect!

Creamy Chicken Casserole with Bacon & Mushrooms can be prepared in just 1 hour and...of course... with that inspirational glass of sauvignon blanc! Serve with Potato Mash* or rice, and finely sliced & steamed green beans for the perfect mid-week meal. Delicious!
Winter has certainly come with a vengeance; who would have thought that we would have snow on the mountains in sunny South Africa (what happened to global warming??). Anyway...it's a good excuse to have another potjie. Albeit I made this Venison Shanks & Baby Onions Potjie on top of the stove (inside, and the atmosphere was slightly lost), but it was still good... especially with lovely red wine. Enjoy! Sweet potatoes have a slightly lower carbohydrate content than regular potatoes. One medium potato contains 26 grams of carbohydrates, while one medium sweet potato contains 23 grams. Sweet potatoes contain almost twice as much fibre as other types of potatoes. Contributing close to 7 grams of fibre per serving, this high fibre content gives them a ‘slow burning quality’ which means their caloric energy is used more slowly and efficiently than a low-fibre carbohydrate. Sweet potatoes are an excellent source of vitamin A and a good source of potassium & vitamin C, B6, riboflavin, copper, pantothetic acid and folic acid. A medium sweet potato has 28% more potassium than a banana. The high amount of water that's found in sweet potatoes helps you lose weight. Like fibre, water takes up a lot of room in your stomach. Therefore, eating foods that contain high amounts of water makes you feel full and will prevent over-eating and snacking between meals. It's a good carb! Roasted Sweet Potato Wedges go well with Peri-Peri Baby Chickens served with Sprout & Sunflower Seed Salad and is a great start to a slim week! It's cold & wet in the Cape and we felt like having a good beef stew (with lots of veges & thick gravy) & snuggling under a blanket to watch Carte Blanche & the movie. It's really easy; once all the prep and initial frying is done, you just leave it on top of the stove to simmer away for 2 hours. I didn't have ciabatta so I served ours with slices of fresh soy & linseed loaf smeared with hard butter...delicious! |
