Serve Crispy Eisbein with sauerkraut, new potatoes tossed in parsley butter, various mustards such as English (hot), German (medium), Dijon (mild) or American (very mild), and apple sauce.
The best sauerkraut to buy is Kühne Fasskraut in a glass "barrel" jar. It is free of preservatives & colourings and because it has been given time to mature, it has a mild taste (not vinegary).
