Two versions of the Hollandaise Sauce are provided; a traditional creamy version and a "foamy" version which is lighter & increases the volume of the sauce. The "foamy" version can be refrigerated, re-heated and even frozen for later use. | Breakfast is my best meal of the day but Eggs Benedict is definitely one of my favourites! Very quick and handy recipe. Foamy version is lighter so maybe add more lemon but delicious non the less.
