Green Beans with Lemon, Garlic & Ginger

Ingredients

400g green beans (string)
1 tsp salt

1 Tbsp butter
1 Tbsp extra virgin olive oil
2 tsp finely chopped garlic
1 tsp finely chopped or minced ginger
1 lemon (zest only)

freshly ground salt & black pepper

Method

Trim the ends of the green beans, add them to a saucepan and cover with water.
Toss in the salt and bring to a boil over a high heat.
Reduce the heat and simmer for 3 min until just tender.
Drain well.

Over a low heat, gently fold the butter, olive oil, garlic, ginger and lemon zest into
the beans.
Season with freshly ground salt & pepper to taste, transfer to a serving dish and serve.

Variation

Exclude the ginger and/or lemon zest for a less spicy version.
