Ingredients

½ large cabbage, cored & thinly sliced
1l water

2 medium onions, peeled, halved & sliced
2 Tbsp light olive oil or coconut oil
2 Tbsp butter
freshly ground salt & pepper, to taste

Method

Place the cabbage and water in a large saucepan and bring to a boil.  Reduce the heat and simmer with the lid on for 5 mins.
Drain in a colander and set aside.

Using the same saucepan, melt the butter in the olive oil on a high heat and then fry the onions for 3 mins while continually stirring.

Add back the cabbage and continue frying and turning the mixture for 10 mins until lightly browned.
Season with salt & pepper and serve.

Variation

Add 100g diced streaky bacon when frying the onions.
