Bubble & Squeak

Servings:           4
Total Time:        30 mins
Cooking Time:  20 mins (stove-top)

Ingredients

4 slices streaky bacon
1 Tbsp light olive oil
 
1 onion, diced
1 Tbsp light olive oil
1 Tbsp butter
500g leftover potatoes (mashed/cubed)
500g leftover cabbage or brussel sprouts, chopped
½ tsp salt
freshly ground black pepper
 
1 Tbsp freshly chopped parsley

Method

Slice the bacon and fry in the olive oil until lightly crispy.
Remove the bacon and set aside.

Over a medium high heat, fry the onion in the olive oil & butter until soft.
Stir in the potatoes and cabbage and season with salt & pepper.
Press down the mixture to cover the pan and fry until lightly browned.
Flip the mixture over and lightly brown the other side.
 
Sprinkle the bacon & parsley over the mixture and cut into wedges to serve.


Serving Suggestions

Serve with a fried or poached egg on top of the Bubble & Squeak.

Variations

Replace some of the cabbage/brussel sprouts with other leftover vegetables.
