Glorious Crayfish

Crayfish Tails Thermidor
We were lucky enough to have been able to get a box of super-sized crayfish tails (which I so prefer over having to deal with a whole crayfish!).
I've decided to go back memory lane and do 3 of my favourite crayfish recipes.
​Here's the 1st - Crayfish Tails Thermidor which I served with savoury rice and a mixed tomato & pomegranate salad.
And I will give the verdict on my best of the 3 recipes once I've made the other 2 - watch this space!

Using those Leftover Veges

Bubble & Squeak
My Dad always used to scout the fridge in the morning after a roast dinner to take out all the leftover veges to make a family favourite, Bubble & Squeak.
You can of course use any of your leftover veges for this fry-up but for Bubble & Squeak it's best to use chopped up roast or boiled potatoes and cabbage/brussel sprouts as a base.
The fried bacon (and its fat!) is also a must and makes this dish really good!

Macaroni Cheese with Ham & Leeks
We are in the middle of a 2nd wave of Covid and I felt like some quick comfort food and so decided to make an old favourite - Macaroni Cheese.
I still had gammon left over from the recent Christmas holiday festivities so I was able to used that up (finally, thank goodness!) and added some leeks which are always a winner.
I really enjoyed it and I hope you do too!

After having been caught up with work and then enduring a shoulder injury/replacement, I've been out of action on this site for a good while... but I'm back!
I've started adding some more recipes, the first being this Curry Mince Loaf which makes either a tasty lunch or dinner.

It's wonderful being able to sit outside once again and enjoy the sunset with a glass of two of vino and share a meal with friends. Braais are an obvious choice but sometimes the salads just become a little bit boring... so why not pickle some vegetables, allow to chill in the fridge with your wine for a few hours and spice up your meal.
These Pickled Carrots & Onions in a Jar are especially good but anything goes really... so have fun and be creative!

This Cheese Soufflé recipe works every time and makes a large soufflé or 8 individual cup-size soufflés.
Serve with a salad for lunch or a light supper, or with fried crispy bacon or pancetta for breakfast for 4 people.  The small individual soufflés could also be served garnished with rocket for a starter for 8 guests.
So versatile!

Caul Fritters with Cheese & Chilli
Cauli Fritters with Cheese & Chilli
These low-carb Fritters made with cauliflower, onions, cheese & chillies bound together with almond flour are really tasty!  This recipe normally serves 4 but I served them for lunch for just the two of us with rump steak and a salad and we polished off the lot!
Unlike other low-carb fritters, these hold their shape and can be prepared well before serving.
